A jar of local honey can tell the story of a season. Its color, aroma, and flavor reflect the flowers blooming near the hive and the work of thousands of bees. But before any honey reaches a jar, our beekeeper educators make an important decision: how much can be harvested while leaving the colony everything it needs?

Why bees make honey
Honey is not simply a byproduct of a busy hive. It is the colony’s food reserve.
Worker bees gather nectar from flowers, carry it back to the hive, and transform it into honey. They store that honey in wax cells and cap it for later. When flowers are scarce, temperatures fall, or bad weather keeps bees inside, the colony depends on those stores for energy.
During winter, honey fuels the bees as they cluster together and generate heat. It also supports the colony in early spring, when the queen begins laying more eggs but nectar may not yet be widely available. In other words, honey helps bridge the gaps between blooming seasons.
That is why responsible beekeeping is not about taking as much honey as possible. It is about identifying what is truly surplus.
How our beekeeper educators decide
There is no single number that works for every hive. A colony’s needs depend on its location, climate, population, health, hive configuration, and the expected timing of the next nectar flow.
Our network of beekeeper educators evaluates each colony individually. They consider questions such as:
- How strong and populous is the colony?
- What does the hive weigh?
- How much capped honey is already stored?
- What time of year is it?
- Which flowers are currently blooming nearby?
- When is the next reliable nectar flow expected?
- Is the hive entering a cold winter, a dry season, or another period with limited forage?
They also look at where the honey is stored. Honey near the brood nest is especially accessible to the colony and is generally treated as part of the bees’ working pantry. Harvestable honey is typically found in the hive’s upper honey boxes, often called supers, after the colony has adequately stocked its own living space.
